  1. Cook quinoa with water as directed on packaging. In a separate pan, sauté ghee, onions, and kale until onions are translucent and kale is slightly wilted. Add egg whites and cook until ready.
  2. Combine quinoa, into egg & kale mixture and top with fresh cherry tomatoes and salsa.
