So, have you been channeling your inner chef lately?
Most of you know that we're all about batch cooking and meal prepping. But our new weekend pastime has transitioned into trying new foods and recipes in an attempt to keep the neverending at-home dining experience as fresh as possible.
While grocery shopping last week, I decided to play a game and searched for the ugliest, weirdest looking vegetable... enter, Celery Root aka Celeriac.
We roasted them in the oven alongside our sweet potato rounds and discovered the most amazing, unintended result. The sliced celery root came out tasting like delicious, crunchy chips with just the right amount of salt! But a very low carb chip at that.
Besides the amazing taste, it turns out that celery root is a nutritional powerhouse. It's packed with fiber and vitamins B6, C and K. It’s also a good source of antioxidants and minerals, such as phosphorus, potassium and manganese.
With a lower carbohydrate count than any other potato, roasted celery root rounds are an easy swap to get your chip fix without the excess carbs. Plus, this recipe is o-naturale, which of course, who doesn't love that.
We are all about keeping things super easy for ourselves and for our members. If it’s too labor intensive, we are over it when it comes to cooking. So this recipe hack may be one that you enjoy, too!
Celeriac Garlic Chips
3 cups Celeriac
1 Tbsp Olive Oil
1 Tbsp Garlic Salt
Recipe Serves 8
A 3.5 ounce (100 gram) serving:
5.9g carbs, 1g protein, .2g fat
