Low carb chips - for real!

So, have you been channeling your inner chef lately?

Most of you know that we're all about batch cooking and meal prepping. But our new weekend pastime has transitioned into trying new foods and recipes in an attempt to keep the neverending at-home dining experience as fresh as possible.

While grocery shopping last week, I decided to play a game and searched for the ugliest, weirdest looking vegetable... enter, Celery Root aka Celeriac.

 
 

Looks Can Be Deceiving...

Truthfully, I had no idea of how to cook and prepare this vegetable, let alone how it would taste, but obviously I was up for much-needed novelty! Can you relate?

We roasted them in the oven alongside our sweet potato rounds and discovered the most amazing, unintended result. The sliced celery root came out tasting like delicious, crunchy chips with just the right amount of salt! But a very low carb chip at that.

HATE CARDIOTRY THIS!

So... apparently it's Friday! Are the days of the week blending together for you, too? Well, we've got this far in the week, and we have an itch to get off Zoom and MOVE.

 

We've cooked up a nice little body weight circuit to help get blood flowing and kick up your energy for the day. Pick and choose the fitness level below that works for you.

 

Complete each exercise back-to-back for 3 rounds, and then rest 2 minutes in between each round. If you have any questions, hit reply to this email so we can guide you in the right direction!

BEGINNING/INTERMEDIATE 

3 Rounds:

10 push-ups (on knees)

10 walking lunges

Jumping Jacks for 30-60 seconds

 

3 Rounds: 

10 air squats

10 sit-ups

Is this you?

We almost gave up. 

We almost threw in the towel.

There are only two of us running the show.

One of us was suddenly thrown into full-time home-schooling and care-taking while trying to work - a challenge that many parents have also encountered. 

The other jumped into crisis management mode to fill the void while holding space for our community during this unprecedented time.

And yet, here we are.

We've continued to push ourselves so hard these past 6 weeks, not only expanding our online services to support the new normal, but mostly to create something new... something that we feel so passionate about, that we did it anyway despite the odds stacking against us.

Our blood, sweat, and many, many, tears have culminated into an offering that we stand by wholeheartedly with absolute pride and gratitude.

COCOONING AT HOME

It isn’t every day that we are given an opportunity to be present with ourselves for such an extended amount of time. Even if we've tried to ignore what has been coming up, we don't have the same routines, activities, and obligations that once kept us in the dark. 

So, what happens when we confront something?

We can: like what we see and continue as is, dislike what we see and attempt to improve our situation, or dislike what we see and use compensatory action to avoid the experience altogether. 

The world will always have ebbs and flows of challenges, but for us, this wave, albeit a big one, is one for surfing. We don't know when this will pass, nor do we know if life will ever be the same. If you feel like you've been held underwater and bashed by the intensity of a turbulent sea, why not grab your board and ride on top of it toward calmer water?
